The Italian Barrel Deep in Renovation as European Combi Oven Prepares for Debut

New Orleans, LA — August 6, 2025 — With its doors now temporarily closed, The Italian Barrel is well underway in its six-week transformation—and at the heart of that upgrade is a European combi oven that promises to elevate the restaurant’s renowned Northern Italian fare.

Ahead of the August 4 closure, Executive Chef Samantha Castagnetti, General Manager Sierra Henriques, and Chef de Cuisine Tzarine traveled to Dallas to test-drive the state-of-the-art oven. The team spent the day in a professional test kitchen fine-tuning a lineup of guest favorites using the new system, which blends steam and convection heat for unparalleled precision and consistency. “We’re not changing who we are—we’re sharpening what we do best,” said Chef Sam. “This oven gives us the ability to execute our classic techniques with even greater finesse.”

Signature dishes tested included Veal Osso Buco, Lasagna Bolognese, Chilean Sea Bass alla Fiorentina, Four-Cheese Potato Soufflé, Parmesan-Toasted Cauliflower, and house-baked focaccia—each calibrated to perfection using the new equipment.

The kitchen and bar redesign are being led by Brad Belletto, CEO of Vision 360 Design & Applied Culinary Technologies. “We’re combining European elegance with modern efficiency,” said Belletto. “This upgrade will give The Italian Barrel’s team the tools to create with even more consistency and creativity.”

“This is about honoring the restaurant’s soul while giving our team what they need to go even further,” said co-owner Kevin Cates, who, alongside his wife Lori, purchased the restaurant in 2024 after years as loyal patrons. “We’re proud to support a team that puts so much heart into every guest experience.”

Also joining the Dallas session was Chef Patrick Ru, chef-partner at the acclaimed Teddy Wongs Dumplings & Wine in Fort Worth. Chef Ru explored the combi oven’s potential for Cantonese Peking Duck and exchanged culinary insights with the Italian Barrel team—a testament to the shared respect and passion among chefs across cultures.

The renovation, which includes a refreshed dining room, updated kitchen, and team retraining, is expected to be completed in time for a September 8 reopening.
